/Fog City Foods, LLC in South San Francisco is looking for a full-time Bakery Kitchen Lead Supervisor.
The ideal candidate is a self-starter and has bread and breakfast pastry experience with solid food safety knowledge.
The bread kitchen lead will maintain high standards for quality and consistency, using 100% real ingredients.

Shifts start at 4:00 a.
m.
to 12:30 p.
m.
and may require overtime as needed.
This position reports to the Plant Superintendent and Owners.
*Principle Duties, Tasks and Responsibilities (includes the following but not limited to):*
* Weigh out/measuring precise amount of baking ingredients using scales or graduated containers.
* Assess the quality of raw materials before baking to ensure conformance to set standards.
* Uniformly mix ingredients using automated equipment such as blenders and mixers.
* Knead dough manually or with the aid of a kneading machine.
* Establish production schedule and set quota for the number of goods to be produced on a daily basis.
* Maintain good knowledge of complex industrial mixing machines and their operation.
* Maintain a clean and hygienic work area in accordance with health and safety regulations and Good Manufacturing Processes (GMPs).
* Decorate baked products by applying icings, toppings and glaze to achieve a finished appearance.
* Following existing recipes closely to ensure that products meet company standards for taste, texture, and appearance.
* Conduct research to develop original recipes for baked products.
* Developing new recipes for bread products based on consumer preferences and dietary needs.
* Monitoring ovens, stoves, or other equipment used to bake products.
* Maintaining inventory of ingredients and supplies used in the kitchen and manage levels and place orders before supplies are all used up.
* Inspecting finished products for quality control purposes, using tools such as microscopes and scales.
* Cleaning baking equipment, such as mixers and ovens, at specified intervals during production.
* Utilizing common bakery machinery, such as a dough mixer or bread slicer.
* Direct and supervise the activities of production staff to ensure all products are up to Company standards.
* Ensure proper storage of baking utensils and supplies.
* Oversee the routine maintenance of baking equipment to ensure efficient operations.
* Train new recruits on baking techniques, machinery and procedures.
* Package and distribute products to wholesalers and retailers.
* Maintain accurate record of baking operations to ensure profitability.
* Adjust thermostatic controls to regulate temperature of ovens.
* Place dough in pans, molds, or on sheets before depositing in ovens for baking.
*Requirements – Skills, Abilities, and Knowledge*
* Proven experience as a bread baker.
* American Institute of Baking (AIB) experience preferred.
* Strong understanding of the baking process, ingredients, and equipment.
* Ability to follow recipes and baking procedures precisely.
* Math skill: employ knowledge of math in weighing and mixing precise quantity of ingredients.
* Excellent physical stamina and sense of smell and taste.
* Attention to details - closely monitor baking process to ensure final products meet set standards.
* High school diploma or equivalent; culinary arts degree preferred.
* Serv-Safe Food Handler certification required.
* 3-5 years of baking experience required.

* 2-3 years of lead position/supervisory experience required.
